I can't take it anymore. At the risk of being the subject of ridicule, I'm gong to share some delicious recipes with you. All you need is beets and swiss chard from the garden or the farmer's market.
I told an acquaintance that I had an abundance of Swiss chard this year and I was becoming bored with it. He suggested "chard rolls". "They're just like cabbage rolls", he said, "...just made with Swiss chard.". Well, what a great idea. I made them. They are delicious. Ground meat and rice rolled into the chard and roasted in the oven in tomato sauce. Try it.
Oh, and the easiest and most simple soup you can imagine. It's a version of borscht, I suppose. You cook your beets and the greens, if you wish. You caramelize onions with some nice olive oil and add freshly chopped garlic at the end of that process. Then, you simply chop up the beets in the water you cooked them in and add the onion and garlic. Stir that up and simmer for a awhile. Serve it with a little sour cream and some crusty bread and OH, BOY!
Now, is it "borscht" with a "T" or "borsch" without the "T"? That's another topic for another day.
